Normally, thighs will be salted within 2 days.
Pork thighs after salting will be washed, taken to a stable room and hung to dry. Here, the thighs are controlled for quality parameters such as temperature and humidity. To be able to meet the transition in the thigh meat. This process takes 60 to 100 days.
After the end of the artificial drying process, the thighs will be brought to the room to dry naturally by allowing natural air into the room. The staff will control the flow of air into the room by opening and closing the windows so that the air flows evenly with the thighs. This helps the thighs to produce fungi that help in the conversion of thighs in the next stage. Before being transferred to the next stage, the thighs are cleaned with sunflower oil and then put into the main cellar. This process can take up to 8 months.
In the next process, the pork thighs will be put into the stew for the thigh meat to continue to transform. This stage is similar to the aging of wine. The proteins and fats in Iberico black pork are modified in a beneficial way. Pork thighs will be cleaned with sunflower oil once a year. Iberico experts call the Calador will stab cala (small veal bones) into pork thighs.
