"Freezing" is a technologically advanced method of food storage to extend the shelf life of food. Meat after being slaughtered, washed will be transferred immediately to the sterilization line and frozen quickly with very low temperature. In just a few minutes, the finished product is finished and distributed to the units.
Therefore, frozen Iberico pork is still fresh, nutritional components are not lost or degraded. Consumers can store it for a long time easily without worrying about the meat going rancid or being invaded by harmful bacteria. Find out 5 reasons why we should use frozen Iberico pork with El Flamico!
1. Keep the freshness of food
If you buy pork in the morning, by noon or afternoon the meat will not be as fresh as it was before, the quality of the meat will also decrease accordingly. As for frozen Iberico pork, after defrosting it is still as fresh as usual and retains its inherent nutritional value.
2. Clear traceability
Iberico pork is a breed of black pig that is raised and produced only in Spain. Meat products are always stamped with full origin, shelf life, information about the importing company...
In Vietnam, the authorities have confirmed that all types of meat imported into the country have been strictly controlled, with all documents proving clear origin. If they meet the standards, they will be put on the market for consumption, otherwise they will have to be re-exported and destroyed. All quality control processes are strictly followed from the input stage.
3. Using European standard freezing technology
The slaughter process is closed, Iberico pigs after slaughter are put into a cooling room with a temperature of -25°C for 10 minutes, to lower the pig's body temperature.
After that, the pork is put in a cool meat storage at a temperature of 0°C to 4°C for a period of 16 to 24 hours. To ensure the biochemical ripening process, the pork becomes cool pork.
Pork production line
Cool meat is brought out to be broken, processed at room temperature, must be refrigerated, with a body temperature of no more than 7°C. After breaking into individual pieces, the meat is put into a deeper freezer with an average temperature of -45°C for about 6-8 hours. Depending on the part of the pig, there is a different freezing time. Finally, the meat is put in a storage room at a temperature of -22°C. The entire process of transporting, storing, and selling meat is guaranteed at a temperature of -18°C to - 22°C.
4. Long shelf life
Maintenance is also very important. For fresh meat this problem is very difficult. For long-term storage, meat must be frozen immediately after it is at 20°C. When buying fresh meat, you won't have enough time to freeze it so quickly.
5. Stable prices, not affected by seasons or diseases
The African swine fever and Corona that are raging in the world today have greatly affected the price of fresh pork in the country. The price of pork is being pushed up very high and difficult to control. Meanwhile, Iberico pork always keeps a stable price .
